Seedy Coconut Cereal

Another breakfast idea created out of the need for solids on the odd occasion. I adore smoothies but even more than that I adore a good filling breakfast cereal. This one has such a brilliant and simple flavour without any added sugar – apart from the figs and berries of course.

WHAT YOU NEED:

1/3 cup activated buckwheat **

2 tablespoons activated sunflower seeds

2 tablespoons activated pepitas

1 tablespoon sesame seeds

4 tablespoons shredded coconut

1 – 2 chopped dried figs

8 activated pecans, roughly chopped

1/2 teaspoon cinnamon

Serve with chilled coconut milk and fresh blueberries

HOW TO MAKE:

  1. Place dry ingredients into a bowl and mix well
  2. Cover with coconut milk and blueberries
  3. Serve immediately for a crunchy cereal or leave to soak for 10 minutes for a porridge like consistency
  4. Serves 1 – 2 people

** No time or dehydrator to activate buckwheat yourself? Have a look for ’Buckinis’ in your nearest organic store as the work has already been done for you!
