Gooey Almond Butter Cups

Gooey Almond Butter Chocs

I have had NUMEROUS requests (and some pretty serious arm twists) for this recipe and although I was saving it for one of my e-books, I figured it would be cruel to torture you any longer. You only need 4 ingredients to make these raw little bites of heaven, so I will be slightly disappointed if I don’t hear about you making them within the next day or two… I want to see pictures people! :) So here it is:

What you need:

Silicon chocolate moulds or silicon ice cube trays **

1 cup cacao butter

1/3 cup cacao powder

2 tablespoons raw honey

100g almond butter (with salt) – I used ‘ceres’ brand

How to make:

  1. Boil about 1 litre of water and place into a large bowl, set aside for a minute
  2. Finely grate the cacao butter and place into a smaller bowl, then sit into the large bowl of boiled water to melt the butter (referred to as ‘double boiling’. We do not want to cook the butter over the stove as this recipe is raw). Another option is to place into a small bowl and into the dehydrator
  3. Stir the butter until it melts and forms an oil, smoothing out any lumps
  4. Add cacao and honey, stir until combined to form a runny chocolate-y goodness
  5. Set mixture aside for 5 – 10 minutes until it becomes a little thicker
  6. Then fill up to one third of each mould ‘hole’ with the liquid chocolate
  7. With a teaspoon, gently spoon a small amount of almond butter in the centre of each mould
  8. With the remaining liquid chocolate, pour over each mould ‘hole’ to cover the almond butter
  9. Place in the fridge to set for a couple of hours then enjoy! ***
  10. Makes around 16 – 20 chocs depending on the size of mould. Keep stored in the fridge – if they manage to last.

*** Be VERY gentle when popping these out of the moulds, I pressed too hard and accidently smooshed a few… of course that was my reason to Curtis as to why half of them had been eaten so quickly. :P
