Mouthwatering Mondays: Pomegranate ‘n Pear Salad
I have been craving pomegranates like nothing else lately and in listening to my body, I’ve been making sure I add them to my green salads as well as consuming them in their amazing raw juicy form. YUM YUM!
Here’s the lowdown on pomegranates and why they are soooo good for you:
High in vitamin C = IMMUNE BOOSTING!
High in antioxidants = COMBATS FREE RADICALS!
High in Vitamin B5 = METABOLISES FAT, CARBOHYDRATES & PROTEIN!
High in Fibre = COLON CLEANSING!
High in Potassium = LOWERS BLOOD PRESSURE!
What you need:
For the salad…
4 cups rocket
2 ripe medium pears, sliced
Seeds from 2 medium pomegranates (roughly 1.5 cups of seeds)
For the dressing…
2 tablespoons apple cider vinegar
2 tablespoons extra virgin olive oil
2 tablespoons lemon juice
1 teaspoon minced ginger
6 cracks of pepper
1/4 teaspoon cumin
1 teaspoon raw honey
SERVES 2 – 4
How to make:
- For the salad, rip the rocket into small pieces and place into separate bowls
- Add the sliced pear and seeds into the bowls and toss gently
- For the dressing, place all ingredients into a small bowl and lightly whisk until combined
- Pour over salad and enjoy!
