Mouthwatering Mondays: Mostly Raw Easy Pizza
If your lucky little teeth have had the pleasure of biting into a slice of raw pizza (ESPECIALLY from the amazing Raw Kitchen in Fremantle) then you will appreciate the serious goodness and lack of guilt that comes with every single bite. There is one thing you may not be aware of though and that is the amount of time and effort that goes into making those perfect raw pizza bases (up to 12 hours alone just to dehydrate those babies). Despite what I had been led to believe… there is in fact NO raw pizza base making fairy *sigh*.
If you do not own a dehydrator nor have the time to plan ahead, then I beg you refrain from dialling your local pizza shop and read on. I’ve created a simpler and much quicker version of the raw pizza which you can whip up in just 20 minutes with whatever vegies you have left in the fridge. So please put the phone down and back away slowly… to the direction of your kitchen!
Recipe makes enough for 2 hungry peeps – or 4 not-so-hungry peeps
What you need:
For the base…
2 ‘Old Time Bakery’ Certified Organic Gluten Free Wraps
For the topping…
1 small jar of pizza/pasta sauce
1 ripe avocado, chopped
20 olives, pitted and chopped
1 tomato, thinly sliced
2 garlic cloves, crushed or thinly sliced
3 tablespoons pine nuts
2 spring onions, chopped
1 bunch coriander, chopped
Sprinkle of cayenne pepper
Sprinkle of Celtic sea salt
A few cracks of pepper
For the nut cheese…
1 cup cashews
Juice from 1 small lemon
1/3 cup of water (add a little more if required)
1/2 teaspoon Celtic sea salt
2 garlic cloves
3 tablespoons olive oil
2 sundried tomatoes
1/2 teaspoon basil
1/4 teaspoon turmeric powder
How to make:
For the nut cheese…
- Place all ingredients into a high speed blender
- Blend until smooth (add more water if required) and set aside
For the pizza…
- Place 2 wraps in the oven for 15 mins (or until crispy)
- Once wraps are crispy enough, remove from the oven and pop onto a couple of plates
- Use a spoon to spread a thin layer of pizza/pasta sauce across both bases
- Make the cheese as per instructions above & using a teaspoon, dollop evenly onto the pizzas
- Distribute the remainder of the ingredients across the bases, leaving the cayenne pepper, salt & cracked pepper until last
- Use a pizza cutter to cut into slices and enjoy immediately while the bases are still nice and crunchy
